  • 1 cup heavy cream Adds a luscious, creamy texture that makes this soup truly indulgent.
  • 1 cup grated Parmesan cheese Nutty and salty, Parmesan enriches the soup and creates a perfect finish.
  • 2 tbsp fresh basil, chopped A burst of freshness and color that complements the richness. (optional)

Instructions

Preparation

  • Begin by adding the boneless, skinless chicken breasts, chicken broth, diced tomatoes, diced onion, minced garlic, Italian seasoning, salt, and black pepper to your crock pot. Stir gently to combine all the ingredients.

Cooking

  • Cover the crock pot and cook on low for 6-7 hours or on high for 3-4 hours. You want the chicken to be tender enough to shred easily.

Shredding Chicken

  • Once cooked, carefully remove the chicken from the crock pot using tongs. Place it on a cutting board and use two forks to shred it into bite-sized pieces.

Combining Ingredients

  • Return the shredded chicken to the crock pot. Stir in the heavy cream and 1 cup of grated Parmesan cheese, mixing well to integrate all the flavors.

Thickening the Soup

  • Allow the soup to cook for an additional 20-30 minutes on high. This will give the soup a chance to thicken beautifully, creating a creamy and satisfying texture.

Serving

  • Once thickened, ladle the soup into bowls. For an extra touch, garnish with additional grated Parmesan cheese and fresh basil. Serve it with crusty bread or garlic knots for a warm, filling meal.

Notes

Chicken Alternatives: Use chicken thighs instead of breasts for a richer flavor. Make it Gluten-Free by ensuring your chicken broth and any additional seasonings are gluten-free. For extra nutrition, consider adding spinach or kale in the last 15 minutes of cooking. Adjust Creaminess if desired by substituting part of the heavy cream with milk or a non-dairy alternative. A splash of lemon juice just before serving can brighten the flavors beautifully.
