Meatloaf Base

Instructions

Caramelize the Onions

  • Melt the butter and olive oil in a large skillet over medium heat. Add the thinly sliced onions and stir occasionally.
  • Allow the onions to caramelize for about 15-20 minutes until golden brown, adding salt and sugar midway.
  • Pour in the beef broth and simmer until the liquid is absorbed, leaving sticky caramelized onions.

Prepare the Meatloaf

  • In a large bowl, combine the ground beef, breadcrumbs, soup mix, milk, egg, Worcestershire sauce, black pepper, and garlic powder.
  • Gently mix the ingredients until just combined and flatten into a rectangular shape on parchment paper.
  • Spread the caramelized onions over the meat and roll it into a log, sealing the edges tightly.

Slow Cook the Meatloaf

  • Grease the crockpot lightly and place the meatloaf inside. Cook on LOW for 6-7 hours or on HIGH for 3-4 hours.
  • In the final 10 minutes, place the Swiss cheese slices on top of the meatloaf to melt.

Serve & Enjoy

  • Transfer the meatloaf to a serving platter and drizzle with warm beef gravy.

Notes
