Ingredients

For the Wreath

  • 1 sheet puff pastry (250 g), thawed Delicate pastry providing a flaky contrast.
  • 1 egg beaten (for egg wash) Adds a golden finish.
  • 1 tbsp sesame seeds or poppy seeds (optional, for decoration) Adds crunchiness and flair.

Filling

  • 1 whole burrata (approx. 125–150 g) Ultra-creamy cheese.
  • 2 ripe peaches, sliced into wedges Provides sweetness and color.
  • 1 tsp olive oil Enhances flavors of grilled peaches.
  • pinch of salt Intensifies overall flavor.
  • 40 g roasted pistachios, roughly chopped Adds crunch and nuttiness.
  • 1-2 tbsp balsamic glaze Ties the dish together with sweetness.
  • to taste Fresh basil or thyme (optional) Adds fresh herb notes.

Instructions

Preparation

  • Preheat the oven to 200°C (400°F). Prepare a baking tray by lining it with parchment paper.
  • Shape the puff pastry into a rough circle and cut a small circle from the center to create a wreath shape.
  • Fold and crimp the outer edges slightly, brush with beaten egg and sprinkle sesame or poppy seeds.

Baking

  • Bake for 20-25 minutes until the pastry is puffed and golden brown.
  • Let it cool slightly once baked.

Grilling Peaches

  • Heat a grill pan with olive oil and grill peach wedges on both sides for about 2-3 minutes until slightly charred.

Assembly

  • Place the burrata in the center of the cooled wreath.
  • Arrange the grilled peaches over the pastry.
  • Scatter the chopped pistachios on top and drizzle with balsamic glaze.
  • Serve immediately, cutting the wreath and enjoying the layers.

Notes

Ensure the puff pastry remains cold before baking for maximum flakiness. Brush generously for color. Avoid overcrowding toppings.
