Ingredients

For the Rolls

  • 1 large cucumber, thinly sliced lengthwise Choose a firm cucumber, English cucumbers are ideal.
  • 100 g feta cheese, crumbled You can substitute with goat cheese or vegan cheese.
  • 2 tbsp almonds, finely chopped Raw, toasted, or chopped almonds can be used.
  • 1 tbsp honey For a vegan option, consider using agave syrup.
  • 1 tbsp balsamic vinegar You can experiment with other vinegars as alternatives.
  • Fresh mint leaves, for garnish (optional)
  • Freshly ground black pepper, to taste

Instructions

Preparation

  • In a small bowl, combine the crumbled feta cheese and finely chopped almonds until well blended.
  • Take a cucumber slice, place a spoonful of the feta-almond mixture at one end, and roll it tightly. Secure with a toothpick if necessary.

Making the Dressing

  • In a separate bowl, whisk honey and balsamic vinegar until smooth.

Serving

  • Arrange rolled cucumber slices on a platter, drizzle the honey-balsamic mixture over them, and garnish with mint leaves and black pepper if desired.

Notes

These rolls can be prepared in advance. Store in an airtight container in the fridge for up to 24 hours but are best served fresh.
