Ingredients

Whipped Feta Ingredients

Topping Ingredients

Instructions

Make the Whipped Feta

  • In a food processor, combine the feta, Greek yogurt, and olive oil. Blend until smooth and creamy. Season with black pepper to taste and chill slightly.

Prep the Cucumber Wraps

  • Using a mandoline or a vegetable peeler, slice the cucumber lengthwise into very thin ribbons. Pat dry with a paper towel to avoid slipping.

Mix the Filling

  • In a bowl, gently combine the whipped feta with chopped smoked salmon, dill, and optional lemon zest. Be careful not to overmix.

Assemble the Sushi Rolls

  • Lay 1–2 cucumber ribbons slightly overlapping. Place one heaping teaspoon of the filling at one end and roll tightly. Finish with the seam side down.

Make the Pistachio Furikake

  • In a dry skillet over low heat, lightly toast the sesame seeds and pistachios until golden and fragrant. Mix with sea salt, nori, and chili flakes.

Top & Serve

  • Sprinkle the completed cucumber rolls with pistachio furikake. Serve cold, optionally drizzled with soy sauce or lemon.

Notes

For perfect cucumber ribbons, use a mandoline for consistency. Fresh ingredients like dill enhance the flavor. A squeeze of lemon before serving can elevate freshness.
