Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Grease and line an 8-inch cake pan with parchment paper.
  • In a mixing bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  • In a separate bowl, beat together softened butter and granulated sugar until light and fluffy.
  • Add in eggs and vanilla extract, mixing well until fully incorporated.
  • Gradually add the dry ingredients to the butter mixture, alternating with buttermilk, and mix until combined.
  • Stir in hot espresso or coffee to the batter.
  • Pour the batter into the prepared cake pan and bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool the cake completely in the pan before transferring it to a wire rack.

Assembly

  • In a small bowl, combine brewed espresso coffee with coffee liqueur.
  • In a mixing bowl, beat together mascarpone cheese, heavy whipping cream, powdered sugar, and vanilla extract until thick and fluffy.
  • In a small saucepan, heat heavy cream until steaming, then pour it over chopped dark chocolate. Stir until smooth.
  • Crumble half of the cooled chocolate cake into the base of a trifle dish. Drizzle generously with the espresso soak.
  • Spread half of the mascarpone cream over the cake, then pour a layer of the chocolate ganache on top.
  • Repeat the layers with the remaining cake, espresso soak, mascarpone cream, and ganache.
  • Top with whipped cream and garnish with dark chocolate shavings or curls.
  • Cover and refrigerate for at least 2 hours, or overnight if time allows.

Notes

Use quality dark chocolate for ganache. Allow the cake layers to cool completely before assembling to prevent sogginess.
