Instructions

Preparation

  • Preheat your oven to 325°F (165°C) and grease a 9-inch springform pan.
  • In a medium bowl, combine crushed chocolate sandwich cookies, sugar, and melted butter. Mix until crumbly, then press into the bottom of your prepared pan.

Make the filling

  • In a large bowl, beat the softened cream cheese and sugar until smooth and fluffy.
  • Add sour cream and mix well.
  • Gently add eggs one at a time, beating well after each addition.
  • Stir in vanilla extract, crushed cookies, and mini chocolate chips until just combined.

Bake

  • Pour the filling over the pre-baked crust. Bake for 60-65 minutes until the center is set and the edges are slightly puffed.
  • Allow the cheesecake to cool on a wire rack for about 10 minutes, then run a knife around the edge to loosen.
  • Let it cool completely before removing the sides of the pan.

Decorate

  • Frost the cheesecake with blue frosting to resemble Cookie Monster.
  • Add the large cookie eyes and any additional cookies for decoration.
