Bread dough ingredients

  • 3 cups all-purpose flour
  • 1 packet active dry yeast (2 1/4 teaspoons) Ensure yeast is fresh for best results.
  • 1 tablespoon sugar Helps activate the yeast.
  • 1 teaspoon salt Enhances flavor.
  • 3/4 cup warm water Around 110°F (43°C) for yeast activation.
  • 1/4 cup pickle juice From the jar.
  • 2 tablespoons olive oil For moisture and flavor.
  • 1/2 cup chopped dill pickles Adds texture.
  • 2 tablespoons fresh dill, chopped Or substitute with 1 tablespoon dried dill.
  • 1/2 cup sliced dill pickles For topping.
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • 1 tablespoon sesame seeds For garnish.
  • 1 tablespoon poppy seeds Optional for garnish.

Instructions

Preparation

  • In a small bowl, mix warm water, pickle juice, sugar, and yeast. Let this mixture sit for 5-7 minutes until the top is foamy.
  • In a large bowl, combine the flour and salt. Add the yeast mixture along with olive oil, and stir until the dough begins to form.
  • Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
  • Gently knead in the chopped dill pickles and fresh dill.
  • Place the dough in an oiled bowl, cover it with a kitchen towel, and let it rise for 1 hour or until doubled in size.

Baking

  • Once risen, roll out the dough into a rectangle. Brush with olive oil and sprinkle with dried oregano and garlic powder.
  • Arrange the sliced pickles on top, then roll the dough tightly into a loaf shape.
  • Place the rolled dough into a greased loaf pan, cover it, and let it rise for another 30 minutes.
  • Preheat your oven to 375°F (190°C). Brush the top with olive oil and sprinkle sesame seeds and poppy seeds on top.
  • Bake the bread for 30-35 minutes or until golden brown and sounds hollow when tapped. Allow it to cool slightly before slicing.

Notes

Store wrapped in plastic or an airtight container for up to 3 days. For longer storage, freeze slices individually. Consider adding cheese or different herbs for variations.
