  • 3 cups cooked chicken breast, chopped Use leftover or rotisserie chicken if available.
  • 1 box stuffing mix (chicken or herb) 6 oz box.
  • 1.5 cups chicken broth Use low-sodium for a healthier option.
  • 0.5 cup unsalted butter, melted Can substitute with olive oil for a lighter version.
  • 1 can cream of chicken soup Can substitute with cream of mushroom soup.
  • 0.5 cup sour cream or Greek yogurt Greek yogurt adds protein.
  • 1 cup celery, chopped
  • 1 small onion, finely diced
  • 0.5 tsp garlic powder
  • 0.5 tsp dried thyme
  • 1 tbsp fresh parsley, for garnish (optional) Adds freshness to the dish.

Instructions

Preparation

  • Preheat the oven to 375°F (190°C). Lightly grease a 9x13" baking dish.
  • In a skillet, cook the celery and onion in a bit of melted butter until softened, about 5 minutes.
  • In a large mixing bowl, combine the stuffing mix with chicken broth and the remaining melted butter. Let soak for about 5 minutes.
  • In another bowl, mix the cream of chicken soup, sour cream (or Greek yogurt), garlic powder, and dried thyme. Stir in the sautéed celery and onion, along with the chopped chicken.

Assembly and Cooking

  • Spread half of the soaked stuffing into the bottom of the greased baking dish.
  • Pour the creamy chicken mixture over this layer and spread it evenly. Top with the remaining stuffing mixture.
  • Cover with foil and bake for 25 minutes. Uncover and bake for an additional 10-15 minutes, until the top is golden and bubbly.
  • Sprinkle with fresh parsley and serve warm.

Notes

Consider adding cheese or using leftover turkey for variations. Pairs well with a fresh salad or roasted vegetables.
