Instructions

Preparation

  • Preheat your oven to 375°F (190°C) to ensure even cooking.
  • Press the pie crust into a 9-inch pie dish. Pricking the base lightly with a fork prevents bubbling during baking.
  • Bake the crust for 8 minutes, then remove it from the oven and set it aside to cool slightly.
  • In a medium pan, heat the olive oil over medium heat. Add the finely chopped onion and cook for about 5 minutes until soft and fragrant.
  • Toss in the chopped spinach and sauté for an additional 2 minutes, just until wilted. Set the mixture aside to cool.
  • In a large bowl, whisk together the ricotta cheese, heavy cream, eggs, grated Parmesan cheese, nutmeg, salt, and pepper until smooth and creamy.
  • Once the spinach and onion mixture has cooled, stir it into the ricotta mixture until well combined.
  • Pour the filling into the pre-baked crust, spreading it out evenly.
  • Bake for 35–40 minutes, or until the quiche is set in the center and golden brown on top.
  • Allow the quiche to cool slightly before slicing. Serve warm or at room temperature for the best flavor.

Notes

Use fresh ingredients for the best flavor. Feel free to add other ingredients like sun-dried tomatoes or artichokes to mix things up. If using homemade dough, refrigerate it for about 30 minutes before baking to prevent shrinking in the oven.
