Instructions

Preparation

  • Preheat the oven to 375°F (190°C) for even baking.
  • Grease a baking dish lightly with olive oil or cooking spray.
  • Heat olive oil in a skillet over medium heat and sauté the chopped onions until they are soft and translucent.
  • Add sliced mushrooms to the skillet and stir occasionally until they release their juices and soften.
  • Stir in the chopped spinach (if using) and cook for 1-2 minutes until just wilted. Remove from heat and let cool slightly.
  • In a large bowl, whisk together the eggs, cottage cheese, salt, and black pepper until fully combined.
  • Mix the mushroom and spinach mixture into the egg mixture, then fold in the crumbled feta cheese gently.
  • Pour the combined mixture into the prepared baking dish and spread it evenly.

Cooking

  • Bake for 30-35 minutes, or until the center is set and the top is lightly golden.
  • Let cool slightly before slicing into squares. Serve warm.
