For the Roasted Garlic Tzatziki

Instructions

Roast the Garlic for Tzatziki

  • Preheat your oven to 375°F (190°C). Slice the top off a whole head of garlic, drizzle it with olive oil, and wrap it in foil. Roast for 30–40 minutes until golden and soft.

Make the Roasted Garlic Tzatziki

  • Combine Greek yogurt, drained grated cucumber, mashed roasted garlic, fresh lemon juice, chopped dill, salt, and black pepper in a bowl. Drizzle with olive oil and mix well. Cover and refrigerate.

Prepare the Feta-Stuffed Chicken Meatballs

  • In a large bowl, mix ground chicken, breadcrumbs, chopped red onion, minced garlic, parsley, dill, oregano, lemon zest, lemon juice, beaten egg, salt, and black pepper until combined.
  • Take a small portion, flatten in your palm, place a cube of feta cheese in the center, wrap the meat around it, and seal into a meatball. Repeat with remaining mixture.

Cook the Meatballs

  • Heat olive oil in a large skillet over medium heat. Add meatballs in batches. Cook for about 10–12 minutes, turning occasionally, until golden brown and fully cooked through.

Serve & Garnish

  • Arrange meatballs on a serving platter. Serve with roasted garlic tzatziki and garnish with extra dill and olive oil.

Notes

To maintain shape, avoid over-mixing the chicken mixture. For more flavor, consider adding sun-dried tomatoes or olives. Broil the meatballs for a crispy exterior if desired.
