Instructions

Bake the Fries

  • Preheat your oven to 425°F (220°C). Spread the frozen crinkle-cut fries on a baking sheet and toss them in vegetable oil. Bake for 20–25 minutes or until golden brown and crisp.

Make the Chili

  • In a skillet over medium heat, add your ground beef or its plant-based counterpart. Brown the meat until cooked through, then stir in the spicy chipotle baked beans, tomato paste, smoked paprika, salt, and pepper. Let this simmer for about 10 minutes.

Prepare the Cheese Sauce

  • Melt the butter in a small saucepan over low heat. Whisk in the flour to create a roux, then gradually add the milk, stirring continuously until thickened. Turn off the heat and add the cheddar cheese, whisking until smooth.

Assemble the Dish

  • Layer a generous helping of hot fries on a plate, ladle the chili over the top, and then pour the cheese sauce on top.

Top It Off

  • Add dollops of sour cream or Mexican crema, sprinkle with diced red onions and fresh cilantro, and drizzle with hot sauce if desired.

Notes

Consider variations like sweet potato fries or different cheese blends. Cook chili in advance for quick assembly later. Store leftovers separately in airtight containers for up to two days.
