Preparation

  • Begin by heating a large skillet over medium heat and melting 2 tablespoons of unsalted butter.
  • Once the butter is bubbling, add the minced garlic, sautéing it for about 1 minute until it becomes fragrant.
  • Add the ground turkey, breaking it apart with a spatula. Season with onion powder, smoked paprika, salt, and pepper. Cook for 5-7 minutes or until browned and thoroughly cooked.
  • While the turkey is cooking, steam the chopped cauliflower florets until tender, approximately 5-7 minutes.
  • Add the steamed cauliflower to the skillet with the cooked turkey. Pour in the remaining 2 tablespoons of butter and mix everything together for a couple of minutes.
  • Stir in the chopped spinach and cook for an additional 2-3 minutes until the spinach wilts down nicely.
  • Remove the skillet from heat and fold in the fresh parsley and lemon juice for a burst of freshness.
  • Serve warm, garnishing with extra parsley if desired.

Notes

Use freshly minced garlic for a more robust flavor. You can add red pepper flakes for a spicy kick or sprinkle cheese before serving. Pair this dish with a side salad or grains like quinoa or rice.
