Instructions

Preparation

  • Let the lamb chops sit out for 20-30 minutes to reach room temperature and pat them dry with paper towels.
  • Season both sides of the chops generously with salt and pepper.

Cooking

  • Heat a cast-iron skillet over medium-high heat until hot.
  • Stand the chops on their fat side and press gently to render the fat for about 5 minutes.
  • Lay the lamb chops flat and sear for about 3 minutes on each side until deep brown.
  • Reduce heat to medium-low, remove excess fat, add melted butter, garlic, and thyme; stir until the butter foams and garlic is aromatic.
  • Baste the chops with the garlic butter sauce for about 1 minute.
  • Transfer the chops to a plate, pour remaining garlic butter sauce over the top, and serve immediately.

Notes

Let the lamb rest for a few minutes after cooking. Use a meat thermometer for desired doneness: 130°F for medium-rare and 140°F for medium. Try other herbs like rosemary or oregano for variations.
