Instructions

Preparation

  • In a small bowl, mix together the soy sauce, cornstarch, and water. Stir until smooth and set aside.

Cooking

  • Heat butter or olive oil in a large skillet or wok over medium-high heat. Add the minced garlic and sauté for 30 seconds until fragrant.
  • Add the thinly sliced carrots and cook for 2 minutes, stirring occasionally.
  • Next, add the broccoli florets and sliced mushrooms. Cook for another 3-4 minutes until the vegetables are slightly tender but still crisp.
  • Pour in the prepared sauce and toss to evenly coat the vegetables. Cook for an additional minute until the sauce thickens slightly.
  • Transfer the stir-fried vegetables to a serving plate and optionally garnish with sesame seeds.

Notes

To ensure a delightful dish, avoid overcooking vegetables for better texture and flavor. For a vegan version, substitute butter with olive oil.
