Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Lightly grease a loaf pan or line it with parchment paper.
  • In a large bowl, combine ground chicken, eggs, grated Parmesan, shredded mozzarella (for inside), almond flour, milk, minced garlic, parsley, onion powder, Italian seasoning, salt, and pepper. Mix until well combined.
  • Transfer the mixture into the prepared loaf pan and smooth the top.

Cooking

  • Bake uncovered for 30–35 minutes until the loaf is firm and cooked through.
  • Remove from the oven and sprinkle the remaining shredded mozzarella on top.
  • Broil for an additional 3–5 minutes until the cheese is bubbly and golden brown.
  • Let the meatloaf rest for 10 minutes before slicing. Garnish with fresh parsley.

Notes

Consider adding finely chopped vegetables like bell peppers or onions for added flavor. You can prepare the meat mixture a day in advance and store it in the refrigerator. Leftovers can be used in sandwiches or salads.
