Instructions

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine ground chicken, breadcrumbs, eggs, Parmesan cheese, minced garlic, chopped onion, milk, parsley, salt, and pepper. Mix until just combined.
  • Shape the mixture into a loaf, being careful not to overwork the meat.
  • Transfer the meatloaf onto a parchment-lined baking sheet.
  • Brush the top with olive oil.

Cooking

  • Bake for 45–50 minutes until golden and the internal temperature reaches 165°F (74°C). If applying mozzarella, sprinkle on top during the last 10 minutes.
  • Let the meatloaf rest for about 10 minutes before slicing.
  • Slice and serve hot.

Notes

Add diced bell peppers or grated carrots for extra flavor. For gluten-free, substitute breadcrumbs with gluten-free varieties. Assemble in advance and refrigerate before baking for convenience. Leftover meatloaf can be used in various dishes.
