Instructions

Preparation of the Crust

  • In a large mixing bowl, combine the crushed chocolate graham crackers with melted unsalted butter. The mixture should hold together when squeezed.
  • Gently press the mixture into the bottom and up the sides of a 9-inch pie dish. Once it’s evenly compacted, chill it in the refrigerator while you prepare the filling.

Making the Filling

  • In a separate large bowl, use an electric mixer to beat together the creamy peanut butter, powdered sugar, softened butter, and vanilla extract. Mix until smooth and creamy.
  • In another bowl, whip the heavy cream until stiff peaks form, then fold the whipped cream into the peanut butter mixture carefully.

Assembling the Pie

  • Spoon the peanut butter filling into your prepared crust, using a spatula to smooth out the top.
  • Return it to the refrigerator and chill for at least 2 hours or until fully set.

Topping the Pie

  • Melt the semi-sweet and milk chocolate chips in a microwave-safe bowl at 30-second intervals, stirring frequently until smooth.
  • Pour the melted chocolate over the chilled pie, spreading evenly with a spatula.
  • If desired, sprinkle the chopped peanuts on top.

Final Chill

  • Place the pie back in the refrigerator for an additional 30 minutes to set the chocolate topping before serving.

Notes

For healthier alternatives, consider whole grain graham crackers or natural sweeteners. Ensure room temperature ingredients for a smoother filling.
