  • 3 golden beets, roasted & sliced Roasted until tender
  • 2 red beets, roasted & sliced Roasted until tender
  • 1 ball burrata cheese, torn Use fresh burrata for best results
  • 1/4 cup pistachios, toasted & chopped For a nutty and crunchy texture
  • 1 tbsp extra virgin olive oil For drizzling
  • 1 tbsp honey To balance flavors
  • 1/2 tsp flaky sea salt Enhances flavors
  • 1/2 tsp black pepper For subtle warmth
  • Zest of 1 orange For brightness

Instructions

Preparation

  • Wrap the golden and red beets in aluminum foil, and roast them in a preheated oven at 400°F (200°C) for 45 to 50 minutes until fork-tender.
  • Allow the roasted beets to cool before peeling their skins and slicing them into 1/2-inch thick rounds.

Assembly

  • Begin layering by placing a slice of golden beet as the base. Add a spoonful of burrata, followed by a slice of red beet. Repeat the layering, finishing with burrata on top.
  • Sprinkle toasted pistachios over the assembled stacks.
  • Drizzle with olive oil and honey, then add the orange zest, flaky sea salt, and black pepper.

Garnishing

  • Garnish with fresh thyme around the stacks and serve immediately.

Notes

Roasting the beets ahead of time can save preparation time. The dish can be enhanced with a drizzle of balsamic glaze for an additional flavor profile. Always use the freshest ingredients for the best texture and taste.
