Ingredients

Beet Preparation

  • 3 pieces golden beets, roasted to perfection and sliced into rounds Roast until fork tender.
  • 2 pieces red beets, tender and earthy, roasted and sliced into rounds Roast until fork tender.

Stack Assembly

  • 1 ball fresh burrata cheese, torn into creamy pieces Use for layering.
  • 1/4 cup pistachios, toasted and coarsely chopped For a nutty crunch.
  • 1 tablespoon extra virgin olive oil For drizzling.
  • 1 tablespoon honey To add a hint of sweetness.
  • 1/2 teaspoon flaky sea salt For balancing flavors.
  • 1/2 teaspoon freshly ground black pepper To enhance taste.
  • 1 piece zest of orange Bright and fragrant.
  • to taste fresh thyme leaves For garnish.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wrap each beet in aluminum foil and place them on a baking sheet. Roast for 45-50 minutes, or until fork-tender. Allow them to cool, then peel and slice into 1/2-inch thick rounds.

Assembly

  • Begin with a slice of golden beet as your base. Top it with a spoonful of creamy burrata, then place a slice of red beet on top. Continue layering until you have a beautiful stack with a final dollop of burrata.
  • Sprinkle stacked beets with toasted pistachios, drizzle with olive oil and honey, then finish with orange zest, flaky sea salt, and black pepper.

Garnish

  • Top off with fresh thyme leaves and serve immediately.

Notes

Use a mandoline slicer for even beet slices. Consider using fresh mozzarella or goat cheese if burrata is not available. You can add protein like prosciutto or smoked salmon. Assemble just before serving for best results.
