Instructions

Preparation

  • Melt the butter: In a small pan over medium heat, add the unsalted butter and melt.
  • Add grated golden beet and honey: Stir in the beet and honey, cook for 3-5 minutes, then remove from heat and cool.
  • Prepare cookie dough: In a mixing bowl, beat the softened butter and powdered sugar until light and creamy, then mix in the vanilla extract and salt.
  • Incorporate flour: Gradually add the all-purpose flour, mixing until the dough forms. Fold in cranberries and cooled beet mixture.
  • Shape the dough: Roll into a log about 2 inches thick, wrap in plastic wrap, and chill for at least 1 hour.

Baking

  • Preheat oven to 350°F (175°C).
  • Slice dough into 1/4-inch rounds and place on a parchment-lined baking sheet.
  • Sprinkle with coarse sugar if desired, then bake for 12-15 minutes until edges are lightly golden.
