For the topping

  • 330 g 330 g (1 2/3 cups) sugar Creates a sweet crunchy layer.
  • 40 g 40 g (1/3 cup) cocoa powder Intensifies chocolate flavor.
  • 480 g 480 g (2 cups) boiling water Creates the gooey center.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • Melt the butter in a 9x9-inch baking dish, ideally doing this in the oven.
  • In a mixing bowl, combine 200 g sugar, 30 g cocoa powder, 225 g flour, 10 g baking powder, 200 g milk, 10 g vanilla extract, and 150 g sourdough starter. Mix until the batter is smooth.
  • Stir in the chocolate chips.
  • Spread the batter evenly over the melted butter in the baking dish.
  • In a separate bowl, mix together 330 g sugar and 40 g cocoa powder.
  • Sprinkle the sugar mixture evenly over the batter.
  • Carefully pour boiling water over the entire surface of the cobbler without mixing it.

Baking

  • Bake in the preheated oven for 35-40 minutes. The top should be set while the center remains gooey.

Serving

  • Let cool slightly before serving and enjoy.

Notes
