Ingredients

For the Chicken

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper

For the Creamy Garlic Sauce

  • 1 cup heavy cream
  • 5 cloves garlic, minced
  • 0.25 cup grated Parmesan cheese
  • 1 tbsp lemon juice
  • 1 tbsp butter
  • pinch salt
  • 1 tsp chopped parsley or chives (optional, for garnish)

Instructions

Marinate the Chicken

  • In a bowl, mix together the boneless, skinless chicken with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Let this mixture sit for about 15 minutes to allow the flavors to meld together.
  • For a deeper flavor, feel free to refrigerate the chicken for up to 4 hours.

Make the Garlic Sauce

  • In a skillet over medium heat, melt the butter.
  • Add the minced garlic and sauté for 1–2 minutes until fragrant.
  • Pour in the heavy cream, and stir in the grated Parmesan cheese. Allow the mixture to simmer for about 5 minutes until it thickens.
  • Add the lemon juice and a pinch of salt. Keep this sauce warm while you grill the chicken.

Grill the Chicken

  • On an outdoor grill or a grill pan, heat to medium-high.
  • Grill your marinated chicken bites for about 8–10 minutes, making sure to turn them occasionally for even browning.
  • They should be fully cooked and have nice grill marks.

Serve

  • Once grilled to perfection, serve hot chicken bites drizzled with the creamy garlic sauce or use it as a luscious dip on the side.
  • If desired, sprinkle with fresh herbs like parsley or chives for an added touch of color and flavor.

Notes

For best results, marinate longer for enhanced flavor and adjust spices in the marinade as desired. Serve with sides like fresh salad or pasta for a complete meal.
