Instructions

Preparation

  • In a bowl, mix together the olive oil, smoky paprika, garlic powder, salt, black pepper, and optional cayenne. Coat the fresh cod fillets evenly with this flavorful mixture, allowing the spices to seep into the fish.

Roasting Tomatoes

  • Preheat your oven to 400°F (200°C). Toss the halved cherry tomatoes with olive oil, garlic powder, salt, black pepper, and dried oregano in a separate bowl. Spread the seasoned tomatoes evenly on a baking sheet and roast them in the oven for 20-25 minutes until they are blistered and caramelized.

Grilling Cod

  • While the tomatoes are roasting, grill the marinated cod on medium heat for 2-3 minutes per side until the fish becomes flaky and opaque. Keep an eye on it to avoid overcooking.

Making Sauce

  • In a small bowl, whisk together the mayonnaise, sour cream, chopped dill, lemon juice, minced garlic, salt, and black pepper until combined. Refrigerate the sauce until ready to use.

Serving
