Instructions

Preparation

  • Heat the olive oil in a large skillet over medium heat until shimmering.
  • Add the chopped onion and minced garlic, sauté for about 3–4 minutes until the onion is translucent and the garlic is fragrant.
  • Add the ground beef to the skillet. Use a wooden spoon to break it up as it cooks. Stir occasionally for about 5–7 minutes until browned.
  • Stir in the chopped spinach, dried oregano, paprika, salt, and pepper. Cook for an additional 3–4 minutes until the spinach wilts.
  • Remove from heat and crumble the feta cheese over the mixture. Sprinkle with fresh parsley.
  • Serve warm, pairing beautifully with crusty bread or over rice.

Notes

For added flavor, try a pinch of chili flakes or lemon zest. This dish can be made with cooked grains or more veggies for variation. Store leftovers in an airtight container for up to 3 days.
