  • 1 pound ground beef
  • 2 medium zucchinis, diced
  • 1 large sweet potato, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onion and minced garlic, sautéing for 2-3 minutes until softened.

Cooking Beef

  • Add ground beef to the skillet, breaking it apart with a spatula.
  • Cook until browned, about 5-7 minutes. Drain excess fat if needed.

Add Sweet Potatoes

  • Stir in diced sweet potatoes, smoked paprika, dried oregano, salt, and black pepper.
  • Cover and cook for about 10 minutes, stirring occasionally, until the sweet potatoes are tender.

Finish with Zucchini

  • Stir in diced zucchini and cook for another 5 minutes, until tender but still crisp.
  • Remove from heat and garnish with fresh parsley.

Notes

For added flavor, include a splash of lemon juice or balsamic vinegar right before serving. You can also add bell peppers or corn for extra texture and color. To speed up cooking, microwave the diced sweet potato briefly before adding it to the skillet.
