Instructions

Preparation

  • Preheat your oven to 400°F or grill to medium-high.
  • In a bowl, mix the BBQ sauce, soy sauce or coconut aminos, pineapple juice, ground ginger, and brown sugar or honey.
  • Slice the yellow and red bell peppers, red onion, and pineapple.
  • Season the chicken breasts with garlic powder, smoked paprika, salt, and pepper.
  • Drizzle the sliced veggies with olive oil and toss to coat.
  • Lay out four pieces of aluminum foil. Place one seasoned chicken breast in the center of each piece.
  • Top each chicken with sautéed veggies and pineapple chunks.
  • Spoon the BBQ sauce over the chicken and veggies in each packet.
  • Fold each foil piece tightly to create sealed packets.

Cooking

  • Bake in the oven for 25–30 minutes or grill for 20–25 minutes, flipping halfway through.
  • After cooking, carefully open the packets (watch for steam!) and garnish.

Notes

For enhanced flavor, marinate the chicken in the BBQ sauce mixture for 30 minutes to a few hours before cooking. Feel free to add more veggies or try different fruits like bananas or mangos for a unique twist.
