Instructions

Preparation

  • In a large pot or Dutch oven, heat the olive oil over medium-high heat until shimmering.
  • Add the beef stew meat into the pot, browning on all sides for about 5-7 minutes. Once browned, remove the beef and set it aside.
  • In the same pot, add the diced onion, chopped carrots, and celery. Cook for 5-7 minutes until softened.
  • Stir in the minced garlic and cook for another minute.
  • Return the browned beef to the pot. Pour in the beef broth and add the pearl barley, bay leaf, thyme, salt, and pepper. Stir to combine.

Cooking

  • Bring the soup to a boil, then reduce heat to low, cover, and let simmer for 1.5 to 2 hours.
  • After simmering, remove the bay leaf, taste the soup, and adjust seasoning if necessary.
  • Serve hot, garnished with freshly chopped parsley, and pair with crusty bread.

Notes

For optimal tenderness, choose cuts like chuck roast or brisket. Consider adding a splash of balsamic vinegar or a tablespoon of tomato paste for added flavor. You can also swap in vegetables like potatoes or peas based on preference.
