Instructions

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a large mixing bowl, combine the chicken thighs with olive oil, honey Dijon mustard, minced garlic, lemon zest, salt, and dry oregano. Mix well.
  • Allow the chicken to marinate for at least 1 hour, or ideally overnight.
  • Cut an onion in half and place the flat side down on a baking sheet lined with parchment paper. Insert two wooden skewers into each onion half.
  • Layer the marinated chicken thighs onto the skewers.
  • Pour water or chicken stock into the base of the baking pan.

Cooking

  • Cover the dish with foil if necessary and bake in the preheated oven for 75-90 minutes, or until the chicken is fully cooked.
  • Let the chicken rest for a few minutes and then slice thinly before serving.

Notes

Marinate the chicken overnight for deeper flavor. Adjust spices as desired. Garnish with fresh herbs or lemon wedges for presentation.
