Instructions

Preparation

  • Cut off the top quarter of the artichoke and snip the thorny tips of the leaves.
  • Rub freshly cut edges with lemon juice to prevent browning.
  • Slice off the stem so the artichoke can sit flat.

Cooking

  • In a pot, add water and bring it to a gentle boil. Place the artichoke in a steaming basket with the lemon halves, garlic cloves, and herb sprigs.
  • Cover and steam for 25-35 minutes, until the leaves loosen easily.

Assembly

  • Let the artichoke cool slightly, then scoop out the fuzzy choke to create space for the burrata.
  • Preheat oven to 200°C (390°F).
  • Place burrata in the center of the artichoke, season with black pepper, olive oil, and optional chili flakes or lemon zest.

Roasting

  • Transfer the artichoke to the oven and roast for about 10 minutes, until the cheese begins to ooze.

Serving

  • Serve the artichoke on a platter, allowing guests to pull apart the leaves and dip them into the burrata.
  • Accompany with crusty bread or focaccia.
