  • In a medium saucepan, combine the milk, cream, honey, salt, and lavender over medium heat. Stir gently until the mixture is steaming, but do not boil. Once steaming, remove the saucepan from the heat, cover, and let steep for about an hour.
  • While the lavender mixture is steeping, whisk the egg yolks in a separate bowl until they turn a pale yellow. Slowly add half a cup of the warm milk mixture to the yolks, whisking constantly to temper the eggs and prevent scrambling.
  • Pour the egg yolk mixture back into the saucepan with the remaining milk mixture. Cook over low heat, stirring nonstop until thick enough to coat the back of a spoon or reaches about 170°F.
  • Strain the custard through a fine sieve into a clean bowl to ensure a smooth texture. Allow the custard to cool to room temperature, then cover and chill in the refrigerator for at least four hours.
  • Once chilled, churn the custard in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency, usually about 20-25 minutes. Transfer the churned mixture to a freezer-safe container and cover it, then freeze for at least four hours until firm.
