Preparation

  • Start by placing a pan over medium heat and adding the unsalted butter. Let it melt completely until it bubbles slightly.
  • Once the butter is melted, add the sliced zucchini. Sauté for 3-4 minutes until they start to soften but still retain some crunch.
  • Drizzle the honey over the sautéed zucchini, then immediately add the lemon zest, fresh lemon juice, vanilla extract, cinnamon, and a pinch of salt. Stir everything together gently to ensure the zucchini is well coated.
  • Allow the mixture to cook for another 2-3 minutes, stirring occasionally, until the zucchini caramelizes slightly and all the flavors meld together beautifully.
  • Transfer the honey-lemon zucchini to a serving plate and finish with a sprinkle of toasted almonds or crushed pistachios for added crunch. Serve warm.

Notes

Chef’s Secret: Use zucchini that is firm and not overly mature for better texture and taste. Optional Extras include adding a pinch of red pepper flakes for a spicy kick or swapping out the vanilla for almond extract. If you want more caramelization, don’t crowd the pan. Cook in batches if necessary.
