Ingredients

For the Rice

Instructions

Preparation

  • In a bowl, whisk together the honey, lime zest and juice, olive oil, minced garlic, cumin, smoked paprika, salt, and pepper to make the marinade.
  • Place the chicken in a shallow dish and pour the marinade over it, ensuring each piece is well-coated. Marinate for 15-20 minutes.

Cooking

  • Heat a large skillet or grill over medium-high heat. Add the marinated chicken and cook for about 6-8 minutes per side, until it reaches an internal temperature of 165°F.
  • Remove the chicken from heat and let it rest for a few minutes before slicing.
  • In a pot, combine rice and water or chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes.
  • Once cooked, fluff rice with a fork and add fresh lime juice, chopped cilantro, and a pinch of salt.

Assembly

  • In a small bowl, toss diced avocados with lime juice and season with salt.
