For the Brussels Chips

  • 250 g Brussels sprouts (outer leaves only) Crisp outer leaves for roasting.
  • 1 tbsp olive oil for Brussels Ensure crisps are golden.

  • Optional: garlic powder or chili flakes For extra kick.

Instructions

Preparation

  • Preheat your oven to 180°C (355°F) to prepare for roasting Brussels sprouts.
  • Trim the stems of the Brussels sprouts and gently peel away the outer leaves.

Roasting Brussels Chips

  • Toss the outer leaves in a bowl with olive oil, salt, and any seasoning of your choice.
  • Spread the leaves in a single layer on a parchment-lined baking tray and roast for 10–12 minutes, shaking the tray halfway through.

Whipping Feta

  • In a blender or food processor, combine the crumbled feta, Greek yogurt, olive oil, lemon juice, lemon zest, and salt and pepper.
  • Blend until smooth and airy, then chill in the fridge.

Preparing Hot Honey

  • In a small pan or microwave, gently warm the honey and stir in chili flakes and smoked paprika.
  • Allow it to infuse for 5–10 minutes.

Serving

  • Spoon the whipped feta into a shallow bowl and drizzle with the hot honey before serving.
  • Place the crispy Brussels leaves alongside for scooping.

Notes

Customize the heat by adjusting chili flakes. Add minced garlic for a flavor boost. For texture, mix chopped nuts or seeds into the whipped feta.
