  • 1 14-ounce can creamy coconut milk
  • 1 onion, finely chopped
  • 2 cloves garlic, minced

  • 1 teaspoon turmeric powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon olive oil
  • 2 cups water or vegetable broth
  • Salt and freshly ground black pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges, for serving

Preparation

  • Start by heating olive oil in a large pot over medium heat. Add the finely chopped onion, minced garlic, and grated ginger. Sauté everything for about 5 minutes, allowing the delightful aromas to fill your kitchen as the onion softens.
  • Stir in the turmeric, cumin, coriander, and cinnamon. Cook for 1–2 minutes while stirring constantly; this helps release their full aroma, creating a fragrant base for your dhal.
  • Add the diced sweet potato, rinsed red lentils, coconut milk, and the 2 cups of water (or broth) to the pot. Stir well to ensure everything is evenly distributed.
  • Raise the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to low and let it simmer. Cook for 25–30 minutes, stirring occasionally, until the lentils break down and the sweet potatoes are fork-tender, creating a creamy texture.

Notes
