Ingredients

For the Sandwich

  • 8 oz beef kielbasa sausage Slice diagonally into 1/4-inch pieces after warming.
  • 4 slices dark pumpernickel bread Can be toasted for extra flavor.
  • 4 oz sliced Gouda cheese Can be substituted with Swiss or cheddar.
  • 2 tablespoons Russian dressing For extra kick, optional spicy mustard can be added.
  • 1/2 cup well-drained sauerkraut Add to two slices of bread.
  • 2 tablespoons butter For greasing the skillet or griddle.

Instructions

Preparation

  • Warm the beef kielbasa in a pan or on a grill over medium heat until crispy. Let cool slightly and slice diagonally into 1/4-inch pieces.
  • Spread out the dark pumpernickel bread slices. On each slice, top generously with sliced Gouda cheese.
  • Spread Russian dressing over the cheese on each slice.
  • On two slices, add the well-drained sauerkraut. On the other two slices, layer the sliced kielbasa.

Cooking

  • Heat a griddle or skillet over medium heat and melt the butter evenly across the surface.
  • Place the bread slices, toppings facing up, on the griddle. Cover loosely with foil and toast until the cheese is melty and the bread is golden brown.

Assembly

  • Combine one slice with sauerkraut and one with kielbasa to assemble your sandwiches.

Notes

For extra flavor, consider toasting the bread before adding toppings. You can store leftovers wrapped tightly, in the refrigerator for up to two days. For freezing, omit the dressing until reheating.
