Preparation

  • Begin by slicing your roasted and peeled beets into thin, even rounds, about 1/8-inch thick. Use a small round cookie cutter for uniform shapes.
  • In a small bowl, combine softened goat cheese, heavy cream, and honey. Whip until smooth and fluffy. Season with salt and pepper, then transfer to a piping bag.

Assembly

  • On a serving plate, start with one beet slice. Pipe or spread a generous layer of whipped goat cheese on top, followed by a sprinkle of candied walnuts.
  • Continue layering with beet slices, goat cheese, and walnuts, using smaller beet slices as you stack higher.

Finishing Touches

  • Drizzle the stacked beets with balsamic glaze, and sprinkle with crushed pistachios and fresh thyme leaves for additional texture and color.

Notes
