Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Trim the woody ends from the asparagus and arrange them on a lined baking sheet. Drizzle with olive oil and season lightly with salt and pepper.
  • In a small mixing bowl, combine the ricotta or cream cheese with the lemon zest, minced garlic, chopped basil, and a sprinkle of salt and pepper. Mix until creamy and well combined.

Assembly and Cooking

  • Lay each salmon fillet flat on a clean surface. Spread 1 to 2 tablespoons of the filling across the center of each fillet and gently roll them up.
  • Place the salmon rolls seam-side down atop the prepared asparagus. Drizzle with fresh lemon juice and a touch of olive oil.
  • Bake for 18 to 20 minutes, or until the salmon is cooked through and slightly golden on top.

Serving

  • Once cooked, remove from the oven and garnish with fresh basil and lemon wedges.
