Instructions

Roasting the Potatoes

  • Preheat your oven to 400°F (200°C). In a large bowl, toss the halved baby potatoes with olive oil, salt, and black pepper. Spread them evenly on a baking sheet and roast for about 20 minutes, until they begin to crisp and turn golden brown.

Adding the Broccoli

  • After 20 minutes of roasting the potatoes, add the broccoli florets to the baking sheet. Toss them gently to pick up oil and seasonings, then return to the oven and roast for an additional 10 minutes until tender and slightly golden.

Searing the Salmon

  • While the vegetables are roasting, heat a skillet over medium heat and melt the unsalted butter until it foams. Stir in the minced garlic, lemon zest, and lemon juice. Place the salmon fillets skin-side down in the skillet and sear for 3 to 4 minutes on each side, basting with the lemon-butter sauce. Adjust cooking time based on desired doneness.

Plating & Garnishing

  • Once everything is cooked, plate the crispy potatoes and roasted broccoli. Place the seared salmon fillets atop the vegetables, drizzle remaining lemon-butter sauce over the dish, and finish with chopped fresh parsley.

Notes

For a lighter option, substitute half of the butter with vegetable broth. Feel free to swap broccoli for seasonal favorites like asparagus or green beans. Experiment with herbs like dill or thyme for added flavor.
