Instructions

Cooking the Orzo

  • Begin by boiling water in a large pot. Add 1 cup of orzo to the boiling water and cook according to package instructions until tender. Once done, drain the orzo and set it aside.

Sauté the Chicken

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced chicken breast, followed by garlic powder, salt, and black pepper. Sauté the chicken until it is golden brown and cooked through, approximately 5–7 minutes. Remove from the skillet and set aside.

Prepare the Vegetables

  • In the same skillet, add the remaining 1 tablespoon of olive oil. Once hot, toss in the chopped zucchini, red bell pepper, and broccoli florets. Sauté the vegetables for 3–4 minutes until they are tender yet still crisp.

Combine Ingredients

  • Return the cooked chicken and the drained orzo to the skillet with the sautéed vegetables. Stir well to combine everything.

Add Flavor

  • Pour in the lemon juice, lemon zest, dried oregano, and, if desired, the red pepper flakes. Continue to cook for an additional 2 minutes, allowing all the flavors to meld together beautifully.

Serve and Garnish

  • Once thoroughly mixed and heated, transfer to serving plates. Top each portion with freshly grated Parmesan and a sprinkle of chopped parsley for that final touch. Serve hot and enjoy!
