Instructions

Preparation

  • In a large mixing bowl, combine almond flour, shredded coconut, protein powder, lemon zest, and salt.
  • Stir in honey (or maple syrup), lemon juice, melted coconut oil, and vanilla extract until a sticky dough forms.
  • Scoop small amounts of the mixture and roll them into bite-sized balls. Optionally, roll each ball in additional shredded coconut.
  • Place the rolled protein balls on a plate and chill them in the fridge for 30 minutes to firm up.
  • Once chilled, store the protein balls in an airtight container in the fridge for up to a week.

Notes

Customize sweetness, use different protein powder flavors, add nuts or seeds for texture. These protein balls can also be frozen for longer storage.
