Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with foil or parchment paper.
  • Remove the stems and gills from each Portobello cap using a spoon.

Filling

  • In a mixing bowl, combine the chopped lobster meat, breadcrumbs, mayonnaise, lemon juice, Old Bay seasoning, Gruyère cheese, and chopped chives. Mix until well combined.

Stuffing and Baking

  • Spoon the lobster mixture into each mushroom cap, pressing the filling in firmly.
  • Place the stuffed mushrooms on the prepared baking sheet and bake for 18–20 minutes until golden.
  • For an indulgent touch, broil the mushrooms for an additional 1–2 minutes to achieve a bubbly top.

Notes
