Instructions

Preparation

  • Pound the chicken breasts to about 3/4-inch thickness for even cooking.
  • Season both sides generously with salt, pepper, garlic powder, onion powder, and optional paprika.

Coating

  • Dust each chicken breast with all-purpose flour, shaking off any excess.
  • If using ranch or creamy garlic dressing, dip the floured chicken into it.

Breading

  • Press the chicken into a mixture of breadcrumbs and grated Parmesan cheese for an even coat.

Searing

  • Heat olive oil in a large oven-safe skillet over medium heat.
  • Carefully add the breaded chicken breasts and sear for about 3-4 minutes on each side until golden brown.

Baking

  • Remove the skillet from heat and preheat your oven to 400°F (200°C).
  • Spread ranch or garlic dressing over the top of each chicken piece.
  • Top with mozzarella cheese and extra Parmesan.

Final Cooking

  • Place the skillet in the preheated oven and bake for 10-15 minutes until the chicken reaches 165°F and the cheese is melted.
  • Allow to rest before garnishing with fresh parsley and serving.

Notes

For extra flavor, marinate the chicken in yogurt or a favorite marinade prior to breading. You can also substitute spices according to preference and use alternatives like crushed cornflakes for the breading.
