Ingredients

For the Crust

  • 1.5 cups almond flour
  • 0.5 cups coconut flour
  • 0.25 teaspoon salt
  • 2 units lemons (zest only)
  • 2 tablespoons poppy seeds
  • 0.25 cups honey or agave syrup
  • 0.5 cups unsalted butter (melted)

For the Filling

  • 2 cups full-fat Greek yogurt
  • 0.25 cups freshly squeezed lemon juice
  • 1 teaspoon pure vanilla extract
  • 2 units large eggs (lightly beaten)
  • 2 tablespoons poppy seeds (additional for the filling)

Optional Garnish

Instructions

Preparation of the Crust

  • Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper for easy removal.
  • In a mixing bowl, combine the almond flour, coconut flour, salt, lemon zest, and poppy seeds. Stir until well mixed.
  • Add the melted butter and honey, mixing until the dry ingredients take on a crumb-like consistency.
  • Firmly press the mixture into the bottom of the prepared pan.
  • Bake for 12 to 15 minutes, or until golden brown. Let cool completely.

Preparation of the Filling

  • In another mixing bowl, whisk together the Greek yogurt, lemon juice, vanilla extract, and beaten eggs until smooth.
  • Fold in the additional poppy seeds until evenly distributed.

Baking the Bars

  • Pour the filling over the cooled crust, spreading it out evenly.
  • Bake for 25 to 30 minutes, until the filling is set yet still slightly wobbly in the center.

Cooling & Chilling

  • Remove the pan from the oven and let the bars cool on a wire rack.
  • After cooling to room temperature, transfer to the refrigerator and chill for at least three hours.

Serving

  • Once chilled and firm, lift the bars out using the parchment paper. Slice into squares and garnish with lemon slices if desired.

Notes

For a firmer texture, refrigerate the bars overnight. Optional flavor boosts include lemon extract and nut-free alternatives using oat flour.
