Ingredients

For the Meatloaf

  • 2 lbs lean ground beef The heart of the meatloaf.
  • 30 pieces Ritz crackers, crushed Adds texture and flavor.
  • 2 oz Lipton onion soup mix Adds onion flavor.
  • 2 large eggs Binds the mixture together.
  • 1 cup ketchup Adds sweetness and moisture.
  • 1 cup Sweet Baby Ray’s Hickory & Brown Sugar BBQ sauce Provides smoky sweetness.
  • 1 tablespoon garlic powder Enhances the flavor.
  • 1 tablespoon onion powder Adds depth to the flavor.
  • 1 teaspoon salt Essential for seasoning.
  • 1 teaspoon pepper Adds a touch of spice.

For the Mac and Cheese

  • 3 cups macaroni noodles The base of the mac and cheese.
  • 2 cups milk Creates a creamy base.
  • 10.5 oz condensed cheddar cheese soup Infuses velvety cheese goodness.
  • 4 cups shredded cheddar and mozzarella cheese blend Melts on top for a gooey finish.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a small bowl, mix together ketchup and BBQ sauce. Set aside.
  • In a large bowl, combine lean ground beef, crushed Ritz crackers, onion soup mix, eggs, and ½ cup of the sauce mixture. Mix gently.
  • Grease a 9×13-inch baking dish and press the meat mixture into the bottom of the dish.
  • Spread the remaining sauce mixture over the meatloaf.
  • Bake in the preheated oven for about 30 minutes.
  • While baking, cook macaroni noodles according to package instructions. Drain and set aside.
  • In a pot over medium heat, whisk together milk, cheddar cheese soup, garlic powder, onion powder, salt, and pepper until smooth.
  • Stir in the drained macaroni and 2 cups of the shredded cheese into the cheese sauce.
  • Once the meatloaf is done, spoon the mac and cheese mixture over the meatloaf layer.
  • Sprinkle the remaining cheese blend over the top.
  • Bake for an additional 17 to 20 minutes until the cheese is bubbling and golden brown.
  • Let the casserole rest for a few minutes before serving.

Notes

For added flavor, consider mixing in spices or herbs. Use different cheeses or add vegetables for added nutrition.
