Instructions

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, mix the cauliflower florets with 1 tablespoon of olive oil, garlic powder, paprika, salt, and black pepper until well-coated.
  • Spread the cauliflower on a parchment-lined baking tray in a single layer.

Cooking

  • Roast the cauliflower for 20–25 minutes until golden and tender.
  • In a saucepan, heat 1 tablespoon of olive oil over medium heat, add minced garlic, and cook for about 1 minute.
  • Pour in the vegetable broth and bring to a gentle simmer.
  • Add the heavy cream, Italian seasoning, red chili flakes, and sun-dried tomatoes, and simmer for 5 minutes.
  • Stir in the Parmesan cheese until melted and smooth. Season with additional pepper if needed.
  • Add the roasted cauliflower to the sauce and stir to coat.
