Instructions

Preparation

  • In a large mixing bowl, combine your cold mashed potatoes, shredded sharp cheddar cheese, large egg, all-purpose flour, chopped fresh chives, garlic powder, salt, and pepper. Mix until you achieve a smooth and thick consistency.
  • Preheat your oven to 400°F (200°C).
  • Generously grease a mini muffin pan with butter or oil.
  • Carefully spoon the potato mixture into each muffin cup, filling them to the top and smoothing the surface slightly.

Baking

  • Place the muffin pan in the preheated oven and bake for 20–25 minutes until the tops are puffed and golden brown.
  • Once baked, let the puffs cool for about 5 minutes before gently removing them from the muffin tin.
  • Sprinkle extra chopped chives on top and serve warm.

Notes

For added flavor, consider mixing in cooked bacon bits or crumbled sausage. Adjust with cayenne pepper or chopped jalapeños for a spicy kick.
