Ingredients

For the Cookie Dough

  • 1/2 cup unsalted butter, softened
  • 1/4 cup cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract to enhance flavor

  • 1 1/2 cups powdered sugar for a sweet frosting
  • 2 tbsp fresh raspberry purée providing fruitiness
  • 1/2 tsp vanilla extract for buttercream flavor
  • pink gel coloring (optional) for an extra pop
  • crushed freeze-dried raspberries (optional) for stunning garnish

Instructions

Create the Cookie Dough

  • In a large bowl, cream together the softened butter, cream cheese, and granulated sugar until it becomes fluffy and light.
  • Add the egg and vanilla extract, mixing until everything is smooth and well combined.
  • In a separate bowl, whisk together the all-purpose flour, matcha green tea powder, baking powder, and salt.
  • Gradually combine the dry ingredients with the wet mixture until a soft dough forms.
  • Cover the dough and chill it in the refrigerator for 30 minutes.

Bake the Cookies

  • Preheat your oven to 350°F (175°C).
  • Roll the chilled dough into balls, roughly 1 tablespoon each, and place them on a lined baking sheet.
  • Gently flatten each ball with your fingers for even baking.
  • Bake in the preheated oven for 10–12 minutes or until the edges are just set.
  • Allow cookies to cool completely on a wire rack.

Prepare the Raspberry Buttercream

  • In a mixing bowl, beat the softened butter until it’s light and fluffy.
  • Gradually add in the powdered sugar, mixing until smooth.
  • Incorporate the raspberry purée and vanilla extract, beating until the mixture is airy and pink.
  • If you desire a more vibrant hue, add a few drops of pink gel coloring.

Decorate the Cookies

  • Once the cookies are completely cool, pipe or swirl a generous layer of raspberry buttercream onto each one.
  • Sprinkle crushed freeze-dried raspberries on top for a stunning finish.
