Cheese

  • 1 cup mozzarella cheese, shredded Provides gooey, melty satisfaction.

Instructions

Preparation

  • In a pan over medium heat, drizzle in the olive oil. As it warms, throw in the chopped spinach, sun-dried tomatoes, garlic powder, and oregano. Sauté for about 2 minutes, until the spinach wilts and the flavors meld. Remove from heat and set aside.
  • Spread softened butter generously on one side of each slice of bread.

Assembly and Cooking

  • Place one slice of buttered bread in a skillet, buttered side down. Layer with mozzarella, feta, and cheddar, followed by the spinach and sun-dried tomato mixture. Top with another slice of bread, buttered side up.
  • Heat your skillet over medium-low heat. Cook the assembled sandwich for about 3-4 minutes per side or until golden brown and the cheese is melted. Use a spatula to press down lightly for even crispness.

Serving

  • Once your sandwich is perfectly grilled, slice it in half and serve immediately while the cheese is still gooey.

Notes

For an extra kick, sprinkle chili flakes inside before grilling. Feel free to add olives or roasted red peppers for more depth. If making several sandwiches, keep them warm in a low oven.
